This was one of the best, most fresh dinners we have had in a while. My husband, Renato, whipped this up in less than half an hour. I do love that man.

Oh yes, it was fantastic. His olive relish atop a turkey burger on a bed of organic greens. Oh my soul- be still!
Here's the recipe for the relish:
Renato’s Olive Relish
- 3 tomatoes
- 6 green olives
- 6 kalamata olives
- 3 tb thinly sliced red onion
- 2 tb of chopped Colby jack and fresh mozzarella
- Juice from one key lime
- 5 small fresh basil leaves, same amount fresh cilantro
- 1 tb premium olive oil
- Pinch of minced onion (the dry stuff)
- Pinch of salt
- Dash of pepper
Mix it all together and enjoy!
I think this would be great on celery, cucumber or even some pita chips!
