Dinner was so delicious, I had to share

Doesn't this look delicious?

This was one of the best, most fresh dinners we have had in a while. My husband, Renato, whipped this up in less than half an hour. I do love that man.

Oh yes, it was fantastic. His olive relish atop a turkey burger on a bed of organic greens. Oh my soul- be still!
 
Here's the recipe for the relish:

Renato’s Olive Relish
  • 3 tomatoes
  • 6 green olives
  • 6 kalamata olives
  • 3 tb thinly sliced red onion
  • 2 tb of chopped Colby jack and fresh mozzarella
  • Juice from one key lime
  • 5 small fresh basil leaves, same amount fresh cilantro
  • 1 tb premium olive oil
  • Pinch of minced onion (the dry stuff)
  • Pinch of salt
  • Dash of pepper
Mix it all together and enjoy!
I think this would be great on celery, cucumber or even some pita chips!
