Blueberry Oatmeal Muffins with Cinnamon Oat Topping
I made some delicious muffins the other morning. Now when I say muffins, you probably think some kind of white cake mix with a frosting, right? Wrong! These are blueberry oatmeal muffins with a cinnamon crumble topping. Oh. My. Word. My oldest son ate 6 of the 12! Here's the super yummy recipe...
Muffins
2 cups oats
1/2 cup honey
1/2 teaspoon sea salt...
1 teaspoon baking powder
2 eggs
3/4 cup milk
1/3 cup melted butter
2 teaspoons vanilla
2 teaspoons cinnamon
Handful of blueberries (probably a cup and a half)
Topping
½ cup brown sugar
½ cup oats
¼ cup flour
¼ tsp. cinnamon
¼ cup butter
Mix together oats, honey, salt, cinnamon, vanilla and baking powder. Stir in eggs, milk, and melted butter. Fold in the blueberries. Scoop batter into 12 paper lined muffin cups. Mix topping ingredients all together in a separate bowl. Sprinkle topping onto each cup. Bake at 350° for about 30 minutes. It takes my oven about 25 minutes.
I double the recipe and freeze some (well, when there's anything left to freeze).
Now, I know it will be super tempting to grab one fresh out of the oven. I do it frequently, however, the oats stick to the paper and you find yourself biting little bits of blueberry-oaty goodness off the liners. If you let them sit 20 minutes or so, the paper will come clean off.
